Mama’s Buffalo Chicken Salad

First of all, I want to say, I LOVE receiving emails from MBB fans! It makes my heart pitter-patter.

There was more, but this made me smile.

YES Sara…I can! I just got carried away with my excitement for Ellen DeGeneres and my vlog. Please tell me you saw my vlog? Are you in with me?

About my vlog, I have to admit, it scared me to be on ‘tv’. (Even though I have been our local news for for product reviews.) It’s a whole new world. I’m not behind words anymore, so I hope you enjoy more because I have lots more to come!

You can see on there that I ran almost a whopping two miles and then Jim stopped again. Jim is eight months old and has stopped twice on me now. A service call has been made.

This is an obstacle.

But just like my vlog said to do, I’m going to find a solution and not let it stand in my way.

Problem: My treadmill needs service and I don’t care to run in the cold, snow.

Solution 1: Call in service and run outside anyways. It’s only temporarily. In all reality, I can get through it. My biggest concern is not having a timer or knowing how far I’m running.

Second solution: Purchase a watch or use an app on my phone.

Third solution: Purchase new treadmill for faster results. (Juts kidding!)

See how easy that is? May not like it, but it’s manageable!

I’m still doing some work out videos from Comcast on Demand as well. I just love their freebies! No cost from my pocket and a great workout = one happy mama!

Ingredients:

  • Chicken tenderloins
  • 3 Tbs Hot Sauce of choice
  • 2 teaspoons olive oil
  • 1 Tbs Ranch dressing
  • 1 cup seasoned breadcrumbs
  • Salad mix
  • Celery

Directions:

  1. Preheat the oven to 400 degrees F.
  2. In a bowl, mix hot sauce, olive oil and ranch dressing.
  3. Place bread crumbs in second bowl. (Man, your stations!)
  4. Place chicken tender in sauce mixture then dunk in bread crumbs. Lay on greased baking sheet.
  5. Do this for the remainder of the chicken.
  6. Cook for 15 minutes, flipping half way. (Make sure chicken reads 165 degrees F and is cooked all the way through)
  7. Turn the broiler on and place under for 5 minutes.
  8. Add to a plate of your favorite salad and celery mix. Enjoy!

Now this girl has a very long night. I’m taking my sister out to our first ever Christmas concert. We’re going to rock this party!
