Banana Oatmeal with Cocoa Nibs

A delightful sweet and savory warming breakfast.

In Maryland, the weather has always been a little, crazy. Sometimes it snows before winter, sometimes we have hail in the summer sun, you just never know what you’re going to get. The temperature is supposed to fall to the 40’s this weekend but today will be 75 degrees. You get it right? Crazy.

On our chilly mornings, I’ve been firing up the stove to have a warm and inviting bowl of porridge. People correct me on my word choice all the time. I don’t know where it came from, it just is what it is. My friend corrects me by saying it’s oatmeal. My aunt tells me it’s hot cereal. My husband likes to point out that the box is called oats and therefore should be called oatmeal. Fine. Ya’ll win.

Even though I’m using it correctly, I will let it go. I now make a delicious bowl of oatmeal. My go-to was a warm bowl with brown sugar and cinnamon but I’m making some changes to my diet. I have to let go to some added sugar. <Gasp.>

No worries, there are so many toppings that you can add to oatmeal. The possibilities are almost endless! Some of my favorite toppings are berries, nuts, seeds, raisins and of course, maple syrup for added sweetness.

Since I’m giving my taste buds a new make-over, I seem to crave more and more sweets. My tongue is just not used to saying goodbye yet so I made this deliciously sweet and satisfying oatmeal to let them know, it’s going to be okay.

This recipe has peanut butter for protein and added with a touch of sweetness of maple syrup. Bananas for fruit and cacao nibs for magnesium. Perfect.
