Kid-friendly, Hidden Veggie Pizza

Yesterday was a pretty awesome day, I have a lot of first time things that I want to share with you.

It started off with my husband taking the kids to school so I could run…uhm, THANK YOU HUBBY! I hit the road a little sore from running 3.1 miles (5k) the day before with my awesome neighbor – so I wasn’t sure what I could do, but I kept chugging along. After planning out route after route in my head, I finally talked myself into doing it…

I had no idea my legs could do it – but there it is, written in stone. Guess there’s going to be a lot of firsts with my upcoming goal so stayed tuned!

In my parenting world, I attended my first PTA orientation night for school. There is an area where I would love to participate in that is not currently at our school. It is my first time pulling together resources to make this area happen. It’s kind of a big deal and I’m really happy to be part of this movement. (Fingers crossed, more soon!) I love being part of communities and helping others where I can, so I found this to be the perfect place for me.

Before I went to PTA, I also had a first in the kitchen…making pizza. Now this is not your authentic Italian pizza but a kid-friendly, veggie powering, delicious pizza.

Remember how I disclosed to you my secret idea of the week? Well it’s happening. Right here and now, let’s hide those veggies!

The sad news: My food processor broke. I swear I feel almost helpless because every idea I have in the kitchen, has involved a food processor.

But when life gives you carrots, you make carrot juice! (ha, ha. Knee-slapper right there. Please come back for my recipes and not my horrible jokes!)

My goal for this week is to sneak in as many carrots as I could. Not to give my children an orangish glow, but to add veggies into their diets. I can’t stress to you enough that my son is a carb-lovin, anti-veggie eating kiddo. So, I’m starting with one veggie at a time.

Creating their favorite dishes such as mac n cheese, chicken nuggets and pizza, I plan on using all 5lbs of carrots in some way or another.

To do this, I need to have a carrot puree on hand. But since my food processor broke, I had to go about this another, a good old fashion way…Hello, fork!

First I chopped two carrots and placed into a saucepan with some water. Partial boiled them until they were fork tender. Drain out some water (you want 1-2 tbs remaining). then mash with fork. Try to get it as smooth as possible.

If you do have a food processor, by all means, please use it! It will make the sauce texture more smooth. Add the sauce into the carrot mixture pot and mix with a whisk. (I also did this over a low temperature.)

You can’t really tell their carrot chunks but more like, “tomato chunks” right?

Then spread the mixture over four gluten free pitas (so they each had their own pizza) and add cheese. Of course, add whatever toppings your kiddos enjoy!

Bake for 5-8 minutes and you have delicious veggie-sauce pizza. Best part, your kids won’t know the difference. My husband asked for this to be included into our weekly meals and honestly, I don’t mind one bit. It’s too effortless not to add it!

Note: Do not confuse homemade pumpkin face mask with carrot puree. The family WILL notice a difference in their dinner. Cheers!
