Past and Present: Polenta Pizzas #Glutenfree

I have to apologize in advance. I have noticed that when I don’t write daily, I talk your ear off in posts. Unfortunately, I don’t have time to blog daily…but I do try. So guess what? I get to talk your ear off again…but this time I’m going to give ya’ll bullet points. Because honestly, that’s how I prefer to read. With hubby working many, many, many hours this week, I have been even more strap for time. Bare with me, there are LOTS of goodies.

PAST: Week in Review

If you are looking for a yummy gluten free snack, try these crunchy kale chips with sunflower seeds. They are sure to chase the vampires away!

If you want love to juice, then you’ll want to make some Pinapple + Grapefruit Juice. Great for fighting those colds!

Running

And with hubby working a whopping 80 hours (and very little sleep for both of us!), I was able to finish the week with 10 miles in. That closed out January (two weeks and counting) for a total of 20 miles! I have to say, I’m pretty darn proud to get out there and run two miles every other day. Read some of it here.

PRESENT: Moving Forward

Hubby was “required” to be in the field for Super Bowl, so he lucked out and had a kid-free game, two years in a row! I had a drop by visitor (don’t ya just love that!) and quickly made an app for her. Did I mention she has a gluten intolerance? So, I threw together something quickly to satisfy her belly…Polenta Pizzas.

This sure is an easy crowd please. Even kid-friendly…yes, the kids liked it too!

Ingredients:

I used Sharp Light Cheddar but if you want to spice it up, try the Jalapeno! Delicious!

*I’m on the Cheese Board, but to be honest, I don’t buy any other kind of cheese. Eat cheddar, it’s all the more betta! Okay…that’s just me and my opinion, but my opinion does ROCK!*

Directions:

Preheat oven to 350. Lightly spray baking sheet. Cut polenta roll into slices. Add sauce and favorite cheese topping. Cook 15 minutes.

Running

With temperatures at almost 50 degrees, I truly thought we were going to have an early Spring, but no, thanks Phil. Couldn’t you have closed your eyes?

It was warm, so I wore a long sleeve, pants, gloves and earmuffs. So, I could sweat the entire run.

I got my watch as a Christmas present and I have yet so figure out how it works. I somehow hit the stop button as I was running. I was really proud of myself, because what you are looking at was timed 1 minute walk, 1 minute run. I switched back and forth the whole time…until I saw it wasn’t working. Wahwah. I did start to run, like run, though. Which was neat. I run at a pace of 6.9. I never would have known! The great outdoor has a way of pushing my abilities. No regret there.

Being an Ambassador is honestly, in my opinion, one of the best “jobs” a girl could have. I love every step of the way and can’t wait to share with you more news as it comes in!

  • Run 3-5 miles followed by recovery drinks from Muscle Milk. (yum!)
