Apple Chicken Sausage, Bean and Rice and Mistletoe Meltdown

You’ve probably been wondering where I’ve been all weekend, since I blog daily. Then again, maybe not.

Awkward!

Brief rundown: I partied like I was a teenager on Friday

…or maybe a rockstar.

My little sis and I went to Mix 106.5 Mistletoe Meltdown and it was AMAZING.

We saw hot bands like, Backstreet Boys (who are back alright!), Sara Bareilles, Avril Lavigne, Plain White T’s and my new favorite…Gavin DeGraw.

I’m going to admit something, don’t hold it against me. I totally tried to sport the fanny pack look, but I couldn’t find one. It must be me, but I don’t like to carry a purse at an event…

Who knows where it may end up after a drink or four?!

So, I took my running belt, totally thinking it was going to embarrass my little sis.

To my surprise, it embarrassed me more.

FAIL.

The show was AM-AZ-ING and I needed a night like that.

The next day, I really did not feel like doing much. To be honest, I don’t think I did. I lounged in my favorite pj’s, ate ice cream and watched TV. It was all good with me.

By the end of the day, I pulled together some homeschooling for the kiddos.

And made an awesome meal, so I just had to share it with you!

If you haven’t had apple chicken sausage, you are missing out.

So sad.

It’s quite delicious. I paired it up with beans and wild rice for one packed protein meal.

PS Sorry about the photo, the crew was starving and well, so was I. It was a snap and go, kind of deal. 🙂

Ingredients:

  • Wild Rice, 1 (8oz) package
  • 1 tbs olive oil
  • 1 package pre-cooked apple chicken sausage
  • 1 onion: chopped
  • 29 oz diced tomatoes with basil, garlic and oregano
  • 1 can cannellini beans: drained and rinsed
  • 1/4 cup water

Directions:

  1. Cook wild rice according to package
  2. Meanwhile, add olive oil in a saute pan over medium-high heat
  3. Add onion and cook for three minutes
  4. Add sausage and cook for 6 minutes
  5. Stir in beans, tomatoes and water.
  6. Bring to a boil, then reduce heat to let simmer 15 minutes

To serve: Place rice in a bowl and add sausage mixture on top. Stir together.

**Bonus: Save sausage mixture in an air-tight container for later. (Freeze or place in fridge for two days.)
