Turkey and Zucchini Meatloaf #TastyTuesday

If you haven’t jumped on the bandwagon from switching beef to turkey in your meals, you should definitely try it!

When I was a consultant, I would demonstrate home cooking shows and cook a dinner for the audience. One of them was meatloaf, but I always switched out the beef for turkey. I can’t tell you how many people, “ooooh” and “ahhhh” and yelled, “This is turkey!” Yes, it’s delicious and I never had a complaint.

We love this meal in our family for a few reasons:

  1. It tastes so darn good
  2. It’s filled with veggies
  3. The kids don’t know!
  4. Bonus* It’s no real work to the chef, just mix in a bowl!

I can’t tell you how nice it is for my picky eater to refuse all veggies but will eat meatloaf stuffed with zucchini. He has no idea and I will never squeal!

If you feel meatloaf pans are “old school”, hey, no worries. Fill a muffin pan 1/2 way with scoops of meatloaf mixture and bake for 25 minutes. Sometimes, the children like to think they are muffins so I just go with the flow.

If you make the classic mashed potatoes with dinner, then add a dollop on top of the muffin for more fun!
