Santa Fe Black Bean Wrap with Avocado

Today I am celebrating my tenth anniversary with my husband. This is our dating anniversary, married for three + years. He has a love for the famous Santa Fe Chicken Wrap so I wanted to deliver for our dinner, minus the chicken. Not that I’m against the chicken, the chicken is great, but I just wasn’t in the mood. There’s so much you can do with this recipe, I’ll throw my suggestions in every step of the way! Hope you and your family enjoy your own very special Santa Fe Black Bean Wrap with Avocado (and with or without chicken!)

Ingredients:

2/3 cup sour cream

3 tablespoons fresh lime juice

1/2 – 3/4 teaspoon salt

1/4 – 1/2 teaspoon black pepper

1/4 teaspoon paprika

1/4 teaspoon cumin

1 – 2 tablespoon minced cilantro

1 shallot: chopped

1 can (15 oz) black beans: drained and rinsed

1/2 can (8oz.) of diced tomatoes with garlic and oregano: drained

hot sauce (optional)

1 avocado: halved, seeded, peeled and diced

bunch of spinach leaves

flour Tortillas

mozzarella or Cheddar Cheese for topping

Recipe As follows:

1. In a medium bowl, combine the sour cream, lime juice, salt, pepper, paprika, cumin, and cilantro (and hot sauce if using). Whisk to combine.

2. Fold in onions, beans and tomatoes to the mixture. (This is also where you would put the cooked chicken in as well)

3. Cover and chill in the fridge.

To Prepare A Wrap:

1.  Layer your tortilla wrap as follows: Black beans mixture, spinach leaves, avocado slices, (more hot sauce if you’d like), mozzarella cheese or cheddar! Wrap and enjoy!

NOTES:

To this mixture add any ingredients you like! corn, jalapeno peppers, red or green peppers, chicken, more spices! Make it yours!
